Fast & Easy Chicken Salad
This is my “go to” dinner in the summer or warmer months. If I’m short on time or haven’t made it to the grocery store, I can run in, grab a few items, and have dinner on the table in about 15 minutes if I have left over chicken in the fridge or use a roasted chicken from the store. I do recommend using organic meats whenever possible. Many grocery stores have organic roasted chickens.
Ingredients
- 2-4 cups of red leaf lettuce chopped and washed
- ½ cup blueberries or other berries of your choice, washed
- 2 tablespoons pecan pieces
- 3 oz cooked chicken you can grill or bake chicken breasts or thighs, or use parts of a roasted chicken that you made or from the grocery store; you can also see the Fast & Easy Baked Chicken Thighs or Breast recipe
- 2 tablespoons balsamic vinegar dressing or dressing of your choice
Instructions

Place lettuce in the bottom of the bowl

Place berries, pecans, and chicken on top of the lettuce

Drizzle with salad dressing
